The video does not provide step-by-step instructions for making ice cream mix from scratch, but it does discuss the pros and cons of doing so. We will be using an Emery Thompson machine in this course, although the principles of ice cream production still apply regardless of the machine you have. Throughout the course, we will cover various topics including how to choose an ice cream base mix, the advantages and disadvantages of making your own base, vanilla, ingredients, suppliers of ingredients, flavorings, purees, and inclusions. We will also discuss how to prepare fruit for ice cream, the use of a refractometer, the small equipment needed, machinery and equipment, batch freezers, blast freezers, and whether they are necessary, storage freezers, tempering your ice cream, dipping cabinets, and the different types of cabinets such as flip top, glass front display, and gelato cabinets.
